Middleby Marshall PS series conveyor ovens cook both faster and at a lower temperature than other ovens, with a 30% improvement compared to the Wow series. Pizza is placed directly on the conveyor and cooked using a combination of pulsed and convection heat. Operationally, converting from a static oven to this system is seamless.
